Super Moist Lemon Pound Cake

Bright, buttery, and bursting with lemon flavor!

Super Moist Lemon Pound Cake

Ingredients:

  • 1½ cups flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1¼ cups sugar
  • 4 eggs
  • 2 tbsp lemon zest
  • ¼ cup lemon juice
  • 1 tsp vanilla
  • ½ cup buttermilk

Instructions:

1. Preheat oven to 350°F (175°C). Grease a 9x5" loaf pan.

2. Whisk flour, baking powder & salt.

3. Cream butter & sugar (3–5 min).

4. Beat in eggs, then lemon zest, juice & vanilla.

5. Add dry mix + buttermilk alternately, starting & ending with flour. Don’t overmix.

6. Pour into pan, bake 50–60 min (toothpick test!).

7. Cool 10 min in pan, then on a rack.

Optional glaze:
Powdered sugar + lemon juice = magic drizzle.
