Soft Frosted Funfetti Sugar Cookies

Ingredients:

For the Cookies:

  • 1 cup (226g) unsalted butter, softened
  • 1 1/4 cups (250g) granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 2 1/2 cups (310g) all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup rainbow sprinkles (jimmies or confetti)

For the Frosting:

  • 2 cups (240g) powdered sugar
  • 2–3 tbsp milk (adjust for consistency)
  • 1/2 tsp vanilla or almond extract
  • Gel food coloring (optional – for a light pastel color)
  • Assorted colorful candy sprinkles for topping

Instructions:

1. Make the Cookies:

1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

2. In a large bowl, cream together the butter and sugar until light and fluffy.

3. Add in eggs and vanilla extract, beating until combined.

4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.

5. Gradually add the dry ingredients to the wet mixture. Mix until just combined.

6. Fold in the rainbow sprinkles.

7. Scoop dough into balls (about 2 tbsp each) and gently flatten them slightly on the baking sheet.

8. Bake for 10–12 minutes, or until the edges are just starting to turn golden. Do not overbake for a soft texture.

9. Let cookies cool completely.

2. Make the Frosting:

1. In a medium bowl, mix powdered sugar, milk, and vanilla until smooth. Adjust with more milk or sugar for desired consistency.

2. Tint with a drop or two of gel food coloring if desired.

3. Spread frosting on cooled cookies and immediately top with colorful candy sprinkles.

4. Let frosting set for at least 30 minutes.
