snowballs recipe
Ingredients
- 2 large eggs
- 1/2 cup sugar
- 1/4 cup oil
- 1/4 cup cold water
- 1 cup self raising flour
- 1 tsp baking powder
Method:
Cream eggs and sugar until the sugar is dissolved. Stir in water and oil. Add self raising flour and baking powder, mix well until combinedGrease small muffin pans slightly and fill with 2 tablespoons of the batter.
Bake in a preheated oven at 180°C for about 10 minutes. Remove from the pans and let it cool down completely.
For the coating use 300g of smooth mixed fruit jam or a packet of jelly and one cup of boiling water, stir until jam or jelly has dissolved. Cool completely before dipping the cakes in the jam mixture. Roll immediately in fine desiccated coconut and enjoy.
