Red Velvet Strawberry Cheesecake ๐ฐ
Ingredients:
Crust:
๐ช 1 1/2 cups crushed red velvet cake crumbs (from a boxed or homemade red velvet cake)๐ง 1/4 cup melted butter
๐ฌ 2 tbsp sugar
Filling:
๐ง 3 (8 oz) blocks cream cheese (softened)๐ฌ 3/4 cup sugar
๐ฅ 1 tsp vanilla extract
๐ฅ 3 large eggs
๐ 1 cup fresh strawberries (pureed)
๐ฏ 1/2 cup sour cream
Topping:
๐ Fresh strawberries for garnish๐ซ Optional: Whipped cream or chocolate shavings
Instructions:
๐ฅ Preheat oven to 325°F (160°C). Grease and line a springform pan.
๐ฅฃ Combine red velvet cake crumbs, melted butter, and sugar. Press mixture into the bottom of the pan to form the crust and bake for 8 minutes.
๐ง Beat cream cheese and sugar until smooth. Add vanilla, then eggs one at a time.
๐ Mix in strawberry puree and sour cream.
๐ฐ Pour the filling over the crust and smooth the top.
⏱️ Bake for 50–60 minutes until the center is just set with a slight jiggle.
❄️ Cool, then refrigerate for at least 4 hours or overnight.
๐ Top with fresh strawberries and optional whipped cream before serving.
