Red Velvet Strawberry Cheesecake ๐Ÿฐ

Ingredients:

Crust:

๐Ÿช 1 1/2 cups crushed red velvet cake crumbs (from a boxed or homemade red velvet cake)
๐Ÿงˆ 1/4 cup melted butter
๐Ÿฌ 2 tbsp sugar

Filling:

๐Ÿง€ 3 (8 oz) blocks cream cheese (softened)
๐Ÿฌ 3/4 cup sugar
๐Ÿฅ„ 1 tsp vanilla extract
๐Ÿฅš 3 large eggs
๐Ÿ“ 1 cup fresh strawberries (pureed)
๐Ÿฏ 1/2 cup sour cream

Topping:

๐Ÿ“ Fresh strawberries for garnish
๐Ÿซ Optional: Whipped cream or chocolate shavings

Instructions:

๐Ÿ”ฅ Preheat oven to 325°F (160°C). Grease and line a springform pan.

๐Ÿฅฃ Combine red velvet cake crumbs, melted butter, and sugar. Press mixture into the bottom of the pan to form the crust and bake for 8 minutes.

๐Ÿง€ Beat cream cheese and sugar until smooth. Add vanilla, then eggs one at a time.

๐Ÿ“ Mix in strawberry puree and sour cream.

๐Ÿฐ Pour the filling over the crust and smooth the top.

⏱️ Bake for 50–60 minutes until the center is just set with a slight jiggle.

❄️ Cool, then refrigerate for at least 4 hours or overnight.

๐Ÿ“ Top with fresh strawberries and optional whipped cream before serving.
