Key Lime Pound Cake with Key Lime Glaze

Ingredients

  • For the Pound Cake:

  • 1 ½ cups (3 sticks) unsalted butter, room temp
  • 2 ½ cups granulated sugar
  • 6 large eggs
  • 3 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup whole milk
  • ⅓ cup key lime juice (fresh or bottled)
  • 1 tbsp key lime zest
  • 1 tsp vanilla extract
  • Green food coloring (optional – for that pretty green hue!)

  • For the Key Lime Glaze:

  • 2 cups powdered sugar
  • 2–3 tbsp key lime juice (adjust for desired thickness)
  • 1 tbsp melted butter
  • Zest of 1 lime (optional, for topping)

Instructions

Preheat Oven to 325°F (165°C). Grease and flour a 10-inch bundt pan well.

Cream Butter & Sugar: Beat butter and sugar until light and fluffy, about 5 minutes.

Add Eggs: Beat in eggs one at a time, mixing well after each.

Mix Dry Ingredients: In a separate bowl, whisk flour, baking powder, and salt.

Alternate Wet & Dry: Add dry ingredients to butter mixture in 3 additions, alternating with milk in 2 additions. Begin and end with flour.

Flavor It Up: Stir in lime juice, zest, vanilla, and a few drops of green food coloring if desired.

Bake: Pour batter into the bundt pan and smooth the top. Bake for 1 hour to 1 hour 10 minutes, or until a toothpick comes out clean. Cool in pan 15 minutes, then turn out onto a wire rack to cool completely.

Make the Glaze
Whisk together powdered sugar, lime juice, and melted butter until smooth.

Drizzle over the cooled cake and let it set slightly before serving.
