Little fried ricotta balls rolled in sugar—fluffy and festive!

Castagnole (Carnival Ricotta Doughnuts)

Ingredients:

 • 1 cup all-purpose flour

 • ¼ cup sugar

 • ½ cup ricotta cheese

 • 1 egg

 • ½ tsp baking powder

 • Zest of ½ lemon

 • Oil for frying

 • Granulated sugar for coating

Instructions:

 1. In a bowl, mix ricotta, egg, sugar, zest.

 2. Add flour and baking powder. Mix to soft dough.

 3. Roll into small balls.

 4. Fry in hot oil until golden and puffed.

 5. Drain and roll in sugar while warm.
