Yoghurt Cake Recipe

Ingredients:

  • - 1 cup plain yogurt (245 grams)
  • - 1 cup sugar (200 grams)
  • - 1/2 cup vegetable oil (120 milliliters)
  • - 3 eggs(about 150 grams)
  • - 1 teaspoon vanilla extract(5 milliliters)
  • - 1 and 1/2 cups all-purpose flour (180 grams)
  • - **2 teaspoons baking powder (8 grams)
  • - 1/2 teaspoon baking soda (2 grams)
  • - A pinch of salt (about 1 gram)
  • - Zest of 1 lemon (optional)

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a loaf cake pan.
2. In a large bowl, mix the yogurt, sugar, and vegetable oil until well combined.
3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
5. Gradually add the dry ingredients to the wet mixture, mixing untill just combined. If using, fold in the lemon zest.
6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
