Fairy Bread Lamingtons 🍞✨

Ingredients

  • For the Sponge Cake:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1/2 cup milk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

  • For the Chocolate Coating:

  • 1 1/2 cups powdered sugar
  • 1/2 cup cocoa powder
  • 1/4 cup unsweetened almond milk (or milk of choice)
  • 1 tsp vanilla extract

  • For the Topping:

  • 1 cup rainbow sprinkles

Instructions

Preheat Oven: Preheat oven to 350°F (175°C). Grease and line an 8x8 inch baking pan.

Make the Sponge Cake: In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla.

Combine Dry Ingredients: In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, alternating with milk, mixing until just combined.

Bake: Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.

Prepare Chocolate Coating: In a bowl, whisk together powdered sugar, cocoa powder, almond milk, and vanilla until smooth.

Coat the Lamingtons: Cut the cooled cake into squares. Dip each square into the chocolate coating, allowing excess to drip off, then roll in rainbow sprinkles.

Serve: Place on a wire rack to set before serving.
