Here’s the recipe for a Cold Lemon Cake with three delicious and refreshing layers!

Cold Lemon Cake

First Layer (Cake):

1. In a bowl, whisk together 2 eggs with 1 and 1/4 cups of sugar until light and fluffy.

2. Add 1 and 1/4 cups of oil and mix well.

3. Add 1 cup of lemon juice, 1 sachet of vanilla, 2 baking powders (or 2 tsp of baking powder), and 2 cups of flour. Mix until smooth.

4. Pour the batter into a greased or parchment-lined cake pan.

5. Bake in a preheated oven at 180°C (350°F) for 30-35 minutes or until the cake is cooked through (check with a toothpick).

6. Once baked, pour fresh orange juice over the cake while it’s still warm.

Second Layer (Cream):

1. In a pot over low heat, combine 1/2 liter (500ml) of milk with 2 tablespoons of sugar and 2 tablespoons of cornstarch (or custard powder).

2. Stir until the mixture thickens and begins to boil.

3. Once thickened, remove from heat and add 2 yogurt cups with peach flavor. Stir to combine and let it cool slightly.

4. Pour the cream mixture over the cake layer.

Third Layer (Jelly):

1. In a pot, mix 2 cups of orange juice with 2 tablespoons of sugar and one regular vanilla pudding (or crème caramel).

2. Heat the mixture until it starts to boil and thickens slightly.

3. Pour this jelly mixture over the cream layer.

Decoration (Optional):

You can decorate with whipped cream, fresh fruits, or nuts, depending on your preference.
