Coconut and semolina sweet recipe
Ingredients:
- 2 eggs
- 1 cup of oil
- 1/2 cup of sugar
- Zest of 1 lemon or orange 🍊
- 2 tablespoons of thick jam (confiture)
- 1 vanilla
- 1 baking powder
- 1 cup of shredded coconut
- 1 1/2 cups of fine semolina (you can adjust the amount depending on the dough consistency)
Preparation Method:
1. Beat the eggs, oil, sugar, zest of the lemon (or orange), and vanilla together until well mixed.
2. Gradually add the shredded coconut, then slowly incorporate the semolina. The dough should remain soft and moist. Adjust the semolina as needed.
3. Once the semolina is absorbed, add the baking powder.
4. Grease your hands with rosewater and shape the dough into small pieces. Roll them in powdered sugar.
5. Place the sweets on a baking tray and bake in a preheated oven (gas oven, with the heat coming from below). Bake until they crack slightly, then move the tray to the upper part of the oven to finish baking.
6. Note: Remove the sweets from the tray while they are still hot to prevent them from sticking.
