Cake with coffee cream

Ingredients:

For the cake:

  • 3 eggs
  • 1 cup vegetable oil
  • 1 cup milk
  • 1 cup sugar
  • 3 tablespoons cocoa powder
  • 2 tablespoons instant coffee
  • 1 packet vanilla sugar
  • 2 teaspoons baking powder
  • 2 cups sifted all-purpose flour

For the coffee syrup:

  • 1 cup milk
  • 2 tablespoons sugar
  • 2 tablespoons instant coffee

For the coffee cream:

  • 1/4 cup sugar
  • 1/4 cup instant coffee
  • 1 packet vanilla sugar
  • 3 packets whipped cream powder (such as Dr. Oetker)
  • Cold water (as needed to achieve desired consistency)

Instructions:

1. Prepare the cake batter:

In a blender, combine the eggs, oil, milk, sugar, cocoa powder, and instant coffee. Blend until smooth.

Add the vanilla sugar, baking powder, and sifted flour gradually, blending until the mixture is well combined.

2. Bake the cake:

Preheat your oven to 180°C (350°F).

Grease and flour a cake pan.

Pour the batter into the pan and bake for approximately 40 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, remove from the oven and let it cool slightly.

3. Prepare the coffee syrup:

In a saucepan, combine the milk, sugar, and instant coffee. Heat over low heat, stirring until the sugar dissolves. Let it cool to room temperature.

4. Prepare the coffee cream:

In a bowl, mix the sugar, instant coffee, and vanilla sugar.

Add the whipped cream powder and cold water gradually, whipping until you achieve a thick, creamy consistency.

5. Assemble the cake:

Once the cake has cooled slightly, use a skewer to poke holes all over the surface.

Slowly pour the cooled coffee syrup over the cake, allowing it to absorb.

After the syrup has been absorbed, spread the coffee cream evenly over the top.

Optionally, decorate with chocolate lines or other toppings of your choice.
