Pecan Pie Cookies Recipe 🍪🥧

Ingredients:

  • For the Cookie Dough:

  • 1 cup unsalted butter, softened 🧈
  • 1/2 cup granulated sugar 🍬
  • 1/2 cup packed brown sugar 🍂
  • 1 large egg 🥚
  • 1 teaspoon vanilla extract 🍦
  • 1 3/4 cups all-purpose flour 🌾
  • 1/4 teaspoon salt 🧂
  • 1/2 teaspoon baking soda 🍞

  • For the Pecan Pie Topping:

  • 1 cup chopped pecans 🌰
  • 1/2 cup corn syrup (light or dark) 🍯
  • 1/4 cup brown sugar 🍂
  • 2 tablespoons unsalted butter, melted 🧈
  • 1 large egg 🥚
  • 1 teaspoon vanilla extract 🍦
  • Pinch of salt 

Instructions:

1️⃣ Prepare the Cookie Dough:

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy and smooth.

Add the egg and vanilla extract, and mix until well combined.

In a separate bowl, whisk together the flour, salt, and baking soda.

Gradually add the dry ingredients to the wet mixture, mixing until combined. The dough will be slightly thick.

2️⃣ Shape the Cookies:

Scoop tablespoon-sized portions of dough and roll them into balls. Place the dough balls onto the prepared baking sheet about 2 inches apart.

Press a small indentation into the center of each dough ball using your thumb to create space for the pecan pie topping.

3️⃣ Prepare the Pecan Pie Topping:

In a medium bowl, combine the chopped pecans, corn syrup, brown sugar, melted butter, egg, vanilla extract, and salt. Mix until everything is well combined.

Spoon about a teaspoon of the pecan mixture into the indentation of each cookie dough ball.

4️⃣ Bake the Cookies:

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown and the pecan pie topping is set.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

5️⃣ Serve:

Serve the cookies once they are fully cooled. Enjoy the perfect combination of chewy cookie dough and crunchy, gooey pecan pie topping!
