Ingredients:
For the Chocolate Cake Layers:
✅ 2 cups all-purpose flour
✅ 2 cups granulated sugar
✅ 3/4 cup unsweetened cocoa powder
✅ 2 tsp baking powder
✅ 1 1/2 tsp baking soda
✅ 1 tsp salt
✅ 1 cup buttermilk
✅ 1/2 cup vegetable oil
✅ 2 large eggs
✅ 2 tsp vanilla extract
✅ 1 cup boiling water
For the White Chocolate Mousse:
✅ 8 oz white chocolate, chopped
✅ 2 cups heavy cream, divided
✅ 1 tsp vanilla extract
For the Dark Chocolate Ganache:
✅ 8 oz dark chocolate, chopped
✅ 1 cup heavy cream
Instructions:
1. Make the Chocolate Cake Layers:
Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined. Stir in boiling water until the batter is smooth.
Divide the batter evenly among the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cool the cakes in the pans for 10 minutes, then remove them to wire racks to cool completely.
2. Prepare the White Chocolate Mousse:
Melt the white chocolate with 1/2 cup of heavy cream in a heatproof bowl over a pot of simmering water. Stir until smooth and let it cool to room temperature.
In a large bowl, whip the remaining 1 1/2 cups of heavy cream with vanilla extract until stiff peaks form. Fold the whipped cream into the melted chocolate mixture until fully combined.
3. Make the Dark Chocolate Ganache:
Place the dark chocolate in a heatproof bowl. Heat the cream in a small saucepan until it just begins to boil, then pour it over the chocolate. Let sit for 5 minutes, then stir until smooth. Let cool to room temperature.
4. Assemble the Cake:
Place one chocolate cake layer on a serving plate. Spread half of the white chocolate mousse over the cake.
Top with the second cake layer and spread with the remaining mousse. Place the third cake layer on top.
Pour the dark chocolate ganache over the top of the cake, allowing it to drip down the sides. Let the ganache set before serving.
Storage Tips:
Store the cake in the refrigerator for up to 3 days. Allow it to come to room temperature before serving to enjoy the full flavors!
