  • 1 cup (240ml) buttermilk
  • ½ cup (45g) unsweetened cocoa powder
  • ½ cup (120ml) hot water
  • For the Dark Chocolate Mousse:
  • 4 oz (115g) dark chocolate (70% cocoa), chopped
  • 1 cup (240ml) heavy cream
  • ¼ cup (60g) granulated sugar
  • 1 tsp vanilla extract
  • For the Milk Chocolate Mousse:
  • 4 oz (115g) milk chocolate, chopped
  • 1 cup (240ml) heavy cream
  • ¼ cup (60g) granulated sugar
  • 1 tsp vanilla extract
  • For the White Chocolate Mousse:
  • 4 oz (115g) white chocolate, chopped
  • 1 cup (240ml) heavy cream
  • ¼ cup (60g) granulated sugar
  • 1 tsp vanilla extract
  • For Decoration:
  • Chocolate shavings or curls (optional)
  • Fresh berries (optional)

Instructions

Prepare the Cake Layer:

Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.

In a medium bowl, combine the flour, baking powder, baking soda, and salt.

In a separate large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, mixing until combined.

Stir in the cocoa powder until smooth. Add the hot water and mix until the batter is well combined (it will be thin).

Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.

Make the Dark Chocolate Mousse:

Place the chopped dark chocolate in a heatproof bowl.

In a small saucepan, heat the heavy cream and sugar over medium heat until it just begins to simmer. Pour the hot cream over the chopped dark chocolate and let it sit for 1-2 minutes. Stir until smooth and fully combined. Let it cool to room temperature.

Once cooled, whip the mousse mixture until light and fluffy. Set aside.

Make the Milk Chocolate Mousse:

Repeat the same process for the milk chocolate mousse. Place the chopped milk chocolate in a bowl, heat the heavy cream and sugar in a saucepan, and pour the hot cream over the chocolate. Stir until smooth, then let it cool to room temperature.

Once cooled, whip the mixture until light and fluffy. Set aside.

Make the White Chocolate Mousse:

For the white chocolate mousse, repeat the process with the chopped white chocolate. Heat the cream and sugar, pour over the white chocolate, and stir until smooth. Let it cool to room temperature.

Whip the white chocolate mousse until light and fluffy.

Assemble the Cake:

Once the cake has cooled, slice it in half horizontally to create two layers.

Place one layer of the cake on a serving plate or cake stand.

Spread a layer of dark chocolate mousse on top of the cake layer, smoothing it out with a spatula.

Add the second layer of cake on top and spread the milk chocolate mousse over it.

Finally, spread the white chocolate mousse on top of the cake, smoothing it out evenly.

Refrigerate the cake for at least 4 hours (or overnight) to allow the mousse layers to set.

Decorate:

Before serving, decorate the top of the cake with chocolate shavings or curls. You can also add fresh berries for a burst of color and flavor.
