Rum and Raisin Cake
Ingredients:
- 1 cup raisins
- 1/2 cup dark rum
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- A pinch of salt
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 cup milk
Instructions:
1️⃣ Preheat the oven:Preheat your oven to 180°C (350°F). Grease a cake pan.
2️⃣ Soak the raisins:
In a bowl, mix the raisins with the rum and let them soak for 30 minutes.
3️⃣ Cream the butter and sugar:
In another bowl, cream the butter with the sugar until the mixture is light and fluffy. Add the eggs one at a time, beating well after each addition.
4️⃣ Add the milk:
Incorporate the milk and mix well.
5️⃣ Prepare the dry ingredients:
In a separate bowl, sift together the flour, baking powder, cinnamon, and salt.
6️⃣ Combine the mixtures:
Gradually add the dry ingredients to the butter mixture and stir until the batter is smooth.
7️⃣ Add the raisins and rum:
Gently fold the raisins and rum into the batter.
8️⃣ Bake the cake:
Pour the batter into the prepared cake pan and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
9️⃣ Cool and serve:
Let the cake cool before removing it from the pan. Serve and enjoy!
