Raspberry and Vanilla Whipped Cream Cake ❤️️

Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • 1 ½ cups fresh raspberries
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar (for the whipped cream)
  • 1 teaspoon vanilla extract (for the whipped cream)
  • Powdered sugar (for dusting, optional)

Directions:

Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 4-5 minutes.
Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and finish with the flour mixture, mixing until just combined.
Divide the batter evenly between the two prepared cake pans and smooth the tops.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
In a chilled mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form. Set aside.
Once the cakes have cooled, place one layer on a serving plate. Spread a generous layer of whipped cream over the top, followed by half of the fresh raspberries.
Place the second cake layer on top and repeat the process, spreading whipped cream and adding fresh raspberries.
Dust with powdered sugar if desired and serve chilled for a refreshing treat.
