What you'll need:
Cake flour—for a light, tender crumb.Granulated sugar—adds sweetness.

Semi-sweet chocolate & heavy cream—for the ganache topping.
Let's make it:
1️⃣ Bake the cake: Preheat your oven to 350°F (177°C). Grease a 9×5-inch loaf pan and line it with parchment paper, leaving an overhang for easy removal. In a bowl, whisk together cake flour, sugar, baking powder, and salt. In another bowl, combine melted butter, egg, milk, and vanilla extract. Pour the wet ingredients into the dry and mix until just combined. Fold in the sprinkles. Pour the batter into the prepared pan and bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.2️⃣ Assemble the layers: Once the cake is cooled, slice it horizontally into three equal layers. Line the loaf pan with plastic wrap, leaving enough overhang to cover the assembled cake. Place the bottom cake layer back into the pan. Spread half of the softened ice cream over the cake layer. Add the middle cake layer on top and spread the remaining ice cream over it. Place the top cake layer on, then wrap the cake tightly with the overhanging plastic wrap. Freeze for at least 6 hours or overnight.
3️⃣ Prepare the ganache: In a heatproof bowl, combine chopped semi-sweet chocolate and heavy cream. Microwave in 20-second intervals, stirring after each, until smooth and combined. Let the ganache cool slightly until it thickens but is still pourable.
4️⃣ Finish the cake: Remove the cake from the freezer and unwrap it. Pour the ganache over the top, allowing it to drip down the sides. Immediately sprinkle additional rainbow sprinkles on top. Return the cake to the freezer for about 15 minutes to set the ganache.
