Date Walnut Breakfast Cookies Recipe
Ingredients:
- 1 cup rolled oats
- 1/2 cup whole wheat flour (or almond flour for gluten-free)
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup chopped dates (pitted)
- 1/3 cup chopped walnuts
- 2 tablespoons ground flaxseed (optional)
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1/4 cup coconut oil (melted) or butter
- 1 teaspoon vanilla extract
Instructions:
Preheat the Oven:Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix Dry Ingredients:
In a large bowl, combine the oats, flour, baking soda, salt, cinnamon, chopped dates, walnuts, and ground flaxseed (if using).
Combine Wet Ingredients:
In a separate bowl, mix together the honey or maple syrup, applesauce, melted coconut oil, and vanilla extract.
Make the Dough:
Pour the wet ingredients into the dry ingredients. Stir until well combined. The mixture will be thick and slightly sticky.
Shape the Cookies:
Scoop out tablespoon-sized portions of dough and roll into balls. Flatten slightly with your palm to form cookie shapes.
Place the cookies on the prepared baking sheet, spacing them about 1 inch apart.
Bake:
Bake for 12-15 minutes, or until the cookies are golden brown around the edges. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
