COCONUT CAKE:
A Tropical Delight in Every Bite
Ingredients:

For the cake:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup coconut milk
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup grated coconut

- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup coconut milk
- 1 tsp vanilla extract
- 1 cup of grated coconut (to decorate)

Step by Step Instructions:
1️⃣ Prepare the cake:
• Preheat the oven to 175°C (350°F). Grease and flour two 9-inch round pans.
• In a large bowl, combine the flour, sugar, baking powder and salt. Mix well.
• Add the butter, coconut milk, eggs and vanilla extract. Beat on medium speed for 2 minutes until mixture is smooth.
• Gently fold in the grated coconut until well distributed.
2️⃣ Bake:
• Divide the batter evenly between the prepared pans.
• Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
• Let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
3️⃣ Prepare the glaze:
• In a large bowl, beat butter until creamy.
• Gradually add powdered sugar, mixing on low speed until combined.
• Add the coconut milk and vanilla extract, and beat on medium speed until the frosting is light and fluffy.
4️⃣ Assemble and decorate:
• Place a layer of cake on a plate and spread a layer of frosting on top.
• Place the second layer on top and cover the top and sides with the remaining frosting.
• Sprinkle the grated coconut over the entire cake to decorate.
