Ingredients

  • 1 ¾ cups (220g) all-purpose flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup (60g) unsweetened cocoa powder
  • 1 ¼ cups (250g) granulated sugar
  • 2 large eggs
  • 1 cup (240ml) buttermilk
  • ½ cup (120ml) vegetable oil
  • 1 tsp vanilla extract
  • 1 cup (240ml) boiling water
  • For the Cherry Filling
  • 1 ½ cups (240g) fresh or jarred cherries, pitted and halved
  • ½ cup (100g) granulated sugar
  • 1 tbsp lemon juice (optional)
  • 1 tbsp cornstarch (optional, to thicken)
  • For the Whipped Cream Topping
  • 2 cups (480ml) heavy cream
  • ½ cup (60g) powdered sugar
  • 1 tsp vanilla extract
  • For Garnish
  • Shaved chocolate or chocolate chips
  • Extra cherries (whole or halved)

Instructions

Make the Chocolate Cake

Preheat your oven to 350°F (175°C). Grease and line two 9-inch (23cm) round cake pans with parchment paper.
In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
Add the sugar and mix well.
In another bowl, beat the eggs, buttermilk, vegetable oil, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Slowly pour in the boiling water, mixing until the batter is smooth (the batter will be thin).
Divide the batter evenly between the two prepared cake pans.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Make the Cherry Filling

In a saucepan, combine the cherries and sugar over medium heat. Cook for 5-7 minutes, stirring occasionally, until the cherries release their juices and soften.
If you want a thicker filling, mix cornstarch with a little water to make a slurry and stir it into the cherry mixture. Cook for an additional 1-2 minutes until thickened.
Remove from heat and let it cool.
Make the Whipped Cream Topping

In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Be careful not to over-whip.
Assemble the Cake

Once the cakes have cooled, slice each cake in half horizontally to create four layers.
Place the first layer of cake on a serving plate or cake stand.
Spread a layer of cherry filling over the cake, followed by a layer of whipped cream.
Place the second layer of cake on top and repeat the layers of cherry filling and whipped cream.
Continue layering the remaining cake layers, cherry filling, and whipped cream. Finish with a generous layer of whipped cream on top.
Garnish and Serve

Decorate the top of the cake with shaved chocolate or chocolate chips, and garnish with whole cherries for a beautiful touch.
Chill the cake for at least 1 hour to let the flavors meld and allow the whipped cream to set.
