No-Bake Baileys Cheesecake 🎂

Ingredients: 

- 1 1/2 cups digestive biscuits, finely crushed 
- 1/2 cup unsalted butter, melted 
- 16 oz cream cheese, softened 
- 1 cup powdered sugar 
- 2 tablespoons Baileys Irish Cream 
- 1 teaspoon vanilla extract 
- 1 cup heavy whipping cream 

Directions: 

1. In a bowl, mix the crushed digestive biscuits and melted butter until the texture resembles damp sand. Press the mixture into the base of a 9-inch springform pan to form a firm crust. Chill in the refrigerator while preparing the filling. 
2. Using an electric mixer or whisk, beat the softened cream cheese until it’s creamy and smooth. 
3. Gradually add the powdered sugar, blending it well with the cream cheese until smooth. 
4. Stir in the Baileys Irish Cream and vanilla extract, mixing until the flavors are fully incorporated. 
5. Whip the heavy cream in a separate bowl until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, ensuring it stays light and fluffy. 
6. Spread the filling over the chilled biscuit crust, smoothing the surface with a spatula. 
7. Cover the cheesecake and refrigerate for at least 4 hours, or until it is completely set. 
8. Once chilled, carefully release the cheesecake from the springform pan and cut into slices to serve.

Total time: 4 hours 20 minutes (including chilling)
