Morning Glory Muffins 🧁
Ingredients:
- 1 cup grated carrots- 1/2 cup crushed pineapple, drained
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup sunflower seeds
- 1/2 cup shredded coconut
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 large egg
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/4 cup raisins
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
Instructions:
1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners, or grease it well.2. In a large mixing bowl, combine the all-purpose flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon. Mix these dry ingredients together until well blended.
3. In a separate bowl, whisk together the egg, oil, and vanilla extract. Stir in the grated carrots, crushed pineapple, shredded coconut, raisins, and sunflower seeds.
4. Pour the wet mixture into the bowl of dry ingredients. Stir gently until just combined; do not overmix.
5. Using a scoop or ladle, fill each muffin cup about 2/3 full with the batter.
6. Bake in your preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.
7. Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
