Ingredients:
For the Cake:
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
For the Frosting:
- 1 cup unsalted butter, softened
- 3-4 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
For the Filling and Topping:
- 2 ripe mangoes, peeled and diced
- 1 cup heavy cream, whipped
Instructions:
Make the Cake:1.Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
2.In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3.In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
4.Alternately add dry ingredients and buttermilk to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined.
5.Pour batter into the prepared pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
6.Let cake cool completely in the pan before inverting onto a wire rack.
Make the Frosting:
1.In a large bowl, cream together butter and powdered sugar until light and fluffy. Beat in milk and vanilla.
2.Add more powdered sugar or milk as needed to reach your desired consistency.
Assemble the Cake:
1.Cut the cooled cake in half horizontally.
2.Spread a layer of whipped cream on the bottom layer.
3.Top with half of the diced mangoes.
4.Place the top layer of cake on top.
5.Frost the top and sides of the cake with the remaining whipped cream.
6.Decorate the top of the cake with the remaining diced mangoes.
