Layered Fruit Cake🍰

It's a refreshing and delicious cake that's perfect for a summer party.

Here's a recipe for the cake:

Ingredients:

  • For the Cake:

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt  
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract  
  • 1 cup buttermilk

  • For the Raspberry Layer:

  • 1 cup fresh or frozen raspberries
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • For the Peach Layer:
  • 2 ripe peaches, peeled and diced
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

  • For the Whipped Cream:

  • 1 cup heavy cream, chilled
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

Make the Cake:

1.Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2.In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3.In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.  
4.Alternately add dry ingredients and buttermilk to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined.
5.Divide batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.  
6.Let cakes cool in pans for 10 minutes before inverting onto wire racks to cool completely.

Make the Raspberry Layer:

1.In a saucepan, combine raspberries, sugar, lemon juice, and cornstarch.
2.Cook over medium heat, stirring constantly, until the mixture thickens.
3.Remove from heat and let cool.

Make the Peach Layer:

1.In a saucepan, combine peaches, sugar, lemon juice, and cornstarch.
2.Cook over medium heat, stirring constantly, until the mixture thickens.
3.Remove from heat and let cool.

Make the Whipped Cream:

1.In a chilled bowl, whip the heavy cream with an electric mixer until soft peaks form.
2.Gradually add the powdered sugar and vanilla extract, beating until stiff peaks form.

Assemble the Cake:

1.Cut each cake layer in half horizontally to create 4 layers.
2.Spread a layer of raspberry mixture on the bottom layer.
3.Top with a layer of whipped cream.
4.Repeat with the remaining layers of cake, raspberry mixture, and whipped cream.
5.Top the cake with a layer of peach mixture and whipped cream.
6.Decorate with fresh raspberries and peach slices.
