Coconut Chocolate Easter Cupcakes 🍫🐣

Ingredients:

- 1/2 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup shredded coconut
- 1/2 cup butter (softened)
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup milk
- Pinch of salt
- Chocolate frosting (store-bought or homemade for topping)

Instructions:

1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
2. In a mixing bowl, cream together the softened butter and granulated sugar until fluffy.
3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
4. In a separate bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt together.
5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix just until combined.
6. Fold in the shredded coconut for a tropical touch!
7. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
8. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
9. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
10. Once cooled, generously frost each cupcake with chocolate frosting and sprinkle some extra shredded coconut on top for garnish.
