- 1 ½ cups graham cracker crumbs (or digestive biscuit crumbs)
- 1/3 cup melted butter
- 3 tablespoons sugar

- 1 pound cream cheese (2 eight ounce or 250 gram packages), softened
- 1 cup powdered sugar (icing sugar)
- 2 teaspoons vanilla bean paste or pure vanilla extract
- 1 ½ cups whipping cream (heavy cream)
Instructions:
Prepare the Crust:In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture is well combined and the crumbs are evenly coated with butter.
Press the mixture into the bottom of a 9-inch springform pan or pie dish, making sure it’s compacted evenly. Use the back of a spoon to press it down firmly.
Chill the crust in the refrigerator while you prepare the filling.
Make the Cream Cheese Filling:
In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add the powdered sugar and vanilla extract (or paste) and mix until fully incorporated.
