Moist chocolate muffins
This recipe will give you super moist , soft , mouth watering muffins
Ingredients
- 1 & 1/4 cups Plain Flour
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/4 cup vegetable oil
- 2 eggs
- 3/4 cup buttermilk
- 6 tbsp cocoa powder
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 tbsp vanilla
- 1/4 tsp salt
Instructions
1. In a large bowl mix the sugars , oil , eggs , buttermilk , vanilla and whisk .
2. In another bowl sift flour , cocoa powder, baking soda , baking powder , salt then whisk everything well together.
3. Mix the wet and dry ingredients together .
4. Pour the batter in the muffin cups and bake at 180 degrees Celsius in a preheated oven for 20 - 22 minutes .
NB❗️: Do not over mix because this is a common cause for dry and hard muffins .
The more you mix the more gluten develops and this will make your muffins dry .
