Mint Chocolate Chip Cake 🌿🍫

Ingredients:

Cake:

Granulated sugar: 2 cups
Vegetable oil: ½ cup
Large eggs: 3
Mint chocolate chip flavor: 1½ tsp
Sour cream: ½ cup
All-purpose flour: 2½ cups
Baking powder: 3 tsp
Table salt: 1 tsp
Milk: 1¼ cups
Green food color: 2 drops
Andes mint chocolates, chopped: 25

Frosting:

Butter, room temperature: 1½ cups
Confectioner’s sugar: 5-6 cups
Mint chocolate chip flavor: 2 tsp
Milk: 3 tbsp
Green food color (divided)

Directions:

Prepare Cake:
Preheat oven to 350°F (175°C).
Grease and line the bottom of three 8" round pans with parchment paper.
In a large mixing bowl, combine sugar, oil, eggs, and mint chocolate chip flavor. Beat on medium for 2 minutes.
Stir in sour cream.
In a small bowl, combine flour, baking powder, and salt.
Add half of the dry mixture and half of the milk to the egg mixture. Mix on low until mostly combined.
Scrape down the sides, then add the remaining dry ingredients, milk, and food color. Beat on low until well incorporated.
Fold in crushed Andes mints.
Divide batter evenly among the prepared pans (about 2 cups per pan).
Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
Cool cakes to room temperature, then wrap each in plastic wrap and freeze.
Prepare Frosting:

In a large mixer bowl, beat butter on high until light and fluffy.
Sift in half of the confectioner’s sugar, beat slowly until incorporated, then on high until whipped.
Add remaining confectioner’s sugar, mint chocolate chip flavor, and milk. Mix slowly, then beat on high until creamy.
Divide frosting into three portions: one white, one light green, and one dark green.
Assemble and Decorate:

Place one frozen cake layer on a cake plate. Level the top if needed.
Spread an even layer of frosting on top. Repeat with the second and third layers.
Apply a crumb coat of frosting around the cake. Freeze to set.
Add a thicker layer of frosting: dark green at the bottom, light green in the middle, and white at the top. Smooth them together.
Decorate with remaining frosting using piping bags and tips. Add green disco dust if desired.
Keep refrigerated until ready to serve.
