Pink Velvet Cake 🍰
Ingredients:
For the cake:
- 2 1/2 cups all-purpose flour- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3 large eggs
- 1 cup buttermilk
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- Red food coloring (as desired)
For the cream cheese frosting:
- 8 oz cream cheese, softened- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.2. In a large bowl, sift together flour, sugar, baking soda, baking powder, and salt.
3. In another bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
4. Mix buttermilk, vinegar, vanilla extract, and red food coloring in a small bowl.
5. Gradually add dry ingredients to butter mixture alternately with buttermilk mixture, beginning and ending with dry ingredients.
6. Divide batter evenly between prepared pans. Smooth tops with a spatula.
7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
8. Cool cakes in pans on wire racks for 10 minutes. Remove from pans and cool completely on wire racks.
9. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy.
10. Place one cake layer on a serving plate. Spread frosting over top. Place second layer on top and frost top and sides of cake.
11. Decorate as desired.
12. Chill cake for at least 1 hour before serving.
