Mint Chocolate Dream Cake with M&M Magic

- 16 ounces cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon mint extract
- ½ cup crushed Mint Oreos

For the Whipped Mint Oreo & M&M Frosting:
- ½ cup unsalted butter, softened
- 8 ounces cream cheese, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- ½ teaspoon mint extract
- 1 cup crushed Mint Oreos and M&Ms (chopped)
Instructions:
Preheat your oven to 350°F (175°C) and grease three round cake pans. Line the bottoms with parchment paper for easy removal.Make the Mint Chocolate Cake: In a large bowl, whisk together flour, baking powder, and salt. Set aside.
In another bowl, cream together softened butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla and mint extracts.
Alternately add the dry ingredients and buttermilk to the wet ingredients, mixing until just combined. Fold in the crushed Mint Oreos.
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely on a wire rack before frosting.
Make the Creamy Cheesecake Filling: In a mixing bowl, beat together softened cream cheese and sugar until smooth. Add the eggs one at a time, then stir in vanilla and mint extracts. Gently fold in the crushed Mint Oreos.
Assemble the Cake: Once the cakes are cool, place one layer on a serving plate. Spread the cheesecake filling evenly over the top. Top with the second cake layer.
Make the Whipped Mint Oreo & M&M Frosting: In a large bowl, cream together softened butter and cream cheese until light and fluffy. Gradually add powdered sugar, then stir in vanilla and mint extracts. Fold in the chopped Mint Oreos and M&Ms.
Frost the Cake: Spread a generous layer of frosting over the top and sides of the assembled cake. Decorate with additional M&Ms for an extra festive touch.
Refrigerate the cake for at least 2 hours before serving. This allows the cheesecake filling to set.
