Refreshing Southern Pineapple Orange Swirl Cheesecake🍊🍍😋
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup crushed pineapple, drained
- 1/2 cup orange juice
- 1/4 cup heavy cream
- Orange and yellow food coloring (optional)
- Pineapple slices, for garnish
- Orange slices, for garnish
- Whipped cream, for garnish
- Mint leaves, for garnish
Directions:
Preheat oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract and mix until combined.
Add eggs one at a time, beating well after each addition. Mix in crushed pineapple, orange juice, and heavy cream until well combined.
Arrange pineapple slices in a single layer over the graham cracker crust.
Divide the batter into two separate bowls. Add orange food coloring to one bowl and yellow food coloring to the other, if desired.
Pour the yellow batter over the pineapple slices, then pour the orange batter on top. Use a knife to swirl the two batters together for a marbled effect.
Bake for 50-60 minutes or until the center is set. Let cool completely, then refrigerate for at least 4 hours or overnight.
Before serving, garnish with pineapple slices, orange slices, whipped cream, and mint leaves.
