Lemon Berry Cream Cheese Roll
Ingredients:
- 4 large eggs
- 3/4 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons lemon zest
- 1/4 cup lemon juice
- 1 cup blueberries
- 1 cup blackberries
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Edible flowers for garnish (optional)
- Powdered sugar for dusting (optional)
Directions:
Preheat oven to 375°F (190°C).In a large bowl, beat eggs and granulated sugar until thick and pale.
In another bowl, sift together flour, baking powder, and salt.
Gently fold the dry ingredients into the egg mixture.
Spread the batter onto a lined jelly roll pan.
Bake for 12-15 minutes until cake springs back when touched.
While cake is hot, roll it in a clean tea towel and let it cool.
For the filling, beat cream cheese, powdered sugar, vanilla, lemon zest, and juice until smooth.
Carefully unroll the cooled cake, spread the cream cheese mixture, and sprinkle berries over the top.
Re-roll the cake, wrap in plastic wrap, and chill for at least 1 hour.
Before serving, dust with powdered sugar and garnish with edible flowers if desired.
