Easy Kiwi Cheesecake ๐Ÿฅ

Ingredients:

  • Crust:

  • 1.5 cups graham cracker crumbs (or 10-11 full graham crackers)
  • 6 tbsp melted butter

  • Vanilla Cheesecake:

  • 1 cup heavy whipping cream (divided)
  • 1 tbsp unflavored gelatin
  • 2/3 cup sugar
  • 16 oz cream cheese (2 blocks), softened to room temperature
  • 1 tsp vanilla extract

  • Kiwi Jelly Topping:

  • 4 kiwis, peeled and pureed
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tsp agar agar powder
  • 2 drops green food coloring (optional)
  • 1-2 kiwis, sliced for decoration

Directions:

Prepare Crust:
Preheat the oven to 350°F (180°C).
Mix graham cracker crumbs with melted butter until crumbly.
Press mixture into a 10-inch springform pan.
Bake for 12 minutes, then set aside to cool.
Vanilla Cheesecake Filling:
Combine 1/4 cup heavy cream with gelatin, let sit for 5 minutes, then microwave for 30 seconds and let cool.
Whip the remaining heavy cream until stiff peaks form.
In another bowl, beat cream cheese and sugar until smooth.
Fold the cream cheese mixture into the whipped cream, add vanilla extract, and mix well.
Add the gelatin mixture and combine thoroughly.
Spread this mixture over the cooled crust and chill in the refrigerator for at least 8 hours or overnight.
Kiwi Jelly Topping:
Puree 4 peeled kiwis in a blender.
In a saucepan, combine kiwi puree, water, sugar, agar agar, and food coloring (if using).
Heat over medium heat, simmer for 2-3 minutes until dissolved, then let cool for 5-10 minutes.
Pour over the chilled cheesecake and refrigerate for at least 30 minutes.
Decorate with sliced kiwis before serving.
