Purple Velvet Berry Bliss Cake
Ingredients:
For the cake:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 tbsp cocoa powder
- 1 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 1/2 cups vegetable oil
- 1 cup buttermilk
- 1 tbsp vinegar
- 1 tsp vanilla extract
- 2 tbsp purple food coloring
For the berry filling:
- 2 cups mixed berries (blueberries, blackberries)
- 1/2 cup sugar
- 2 tbsp cornstarch
For the cream cheese frosting:
- 1 cup butter, softened
- 2 cups cream cheese, softened
- 4 cups powdered sugar
- 1 tbsp purple food coloring
Directions:
• Cake: Preheat oven to 350°F (175°C). Whisk together flour, sugar, cocoa, baking soda, and salt. In another bowl, beat eggs, oil, buttermilk, vinegar, vanilla, and food coloring. Combine wet and dry ingredients. Pour into two greased 9-inch cake pans. Bake for 28-30 minutes.• Berry filling: Cook berries, sugar, and cornstarch over medium heat until thickened, about 10 minutes. Cool completely.
• Frosting: Beat butter and cream cheese until creamy. Add powdered sugar and purple food coloring, beat until smooth.
• Assemble: Slice each cake in two layers horizontally. Layer cake, spread berry filling, top with another cake layer. Frost and decorate with fresh berries.
