Red Velvet Cheesecake

Ingredients:

For the Crust:

  • 24 Oreo cookies, finely crushed
  • 1/4 cup unsalted butter, melted
  • For the Filling:
  • 3 packages (8 ounces each) cream cheese, softened
  • 1/3 cup granulated sugar
  • 1/4 cup sour cream
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 tablespoon red food coloring
  • 2 teaspoons distilled white vinegar

For the Topping:

  • Whipped cream
  • Crumbled red velvet cake or additional crushed Oreos

Directions:

Prepare the Crust:

Combine crushed Oreo cookies with melted butter until well mixed.
Press firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.

Make the Filling:

In a large bowl, beat the cream cheese until smooth. Add sugar, sour cream, cocoa powder, and vanilla extract, mixing until combined.
Gradually mix in buttermilk, red food coloring, and vinegar until smooth.
Pour the filling over the prepared crust and smooth the top with a spatula. Refrigerate until set, at least 4 hours or overnight.

Add the Topping:

Before serving, top with whipped cream and sprinkle with crumbled red velvet cake or additional crushed Oreos.
