Pistachio Cheesecake
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup butter, melted
- 1/4 cup sugar
- 3 (8 oz) packages cream cheese, softened
- 1 cup white chocolate chips, melted
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup pistachios, finely chopped
- 1/4 cup heavy cream
- 1/2 cup pistachios, crushed, for topping
Directions:
Preheat oven to 350°F (175°C).In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan to form the crust.
In a large bowl, beat cream cheese and sugar until smooth. Blend in melted white chocolate.
Add eggs one at a time, beating well after each addition. Mix in vanilla extract and heavy cream.
Fold in finely chopped pistachios and pour the mixture over the crust.
Bake for 50 minutes, or until the center is set. Turn off the oven and let the cheesecake sit in the oven for 1 hour.
Chill in the refrigerator for at least 4 hours.
Before serving, garnish with crushed pistachios.
