Chocolate Cherry Amaretto Cake


Ingredients:

1 box chocolate cake mix (plus ingredients listed on the box)
1 (21 oz) can cherry pie filling
3 large eggs
1/2 cup vegetable oil
1/2 cup amaretto liqueur
1 teaspoon almond extract

For the Amaretto Frosting:

1/2 cup unsalted butter, softened
4 cups powdered sugar
1/4 cup amaretto liqueur
1 teaspoon almond extract
2-4 tablespoons milk or cream
Maraschino cherries for garnish (optional)

Directions:

Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
In a large mixing bowl, combine chocolate cake mix, cherry pie filling, eggs, vegetable oil, amaretto liqueur, and almond extract. Mix until well combined.
Pour the batter into the prepared baking pan and spread it evenly.
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool completely in the pan on a wire rack.
For the Amaretto Frosting:

In a large bowl, beat the softened butter until creamy.
Gradually add powdered sugar, amaretto liqueur, almond extract, and milk or cream, beating until smooth and creamy.
If the frosting is too thick, add more milk or cream, 1 tablespoon at a time, until desired consistency is reached.
Spread the frosting over the cooled cake.
Garnish with maraschino cherries, if desired.
Serve and enjoy!
