Blackberry Cheesecake... 😋

Ingredients:

For the Blackberry Crust:

  • 1 1/2 cups blackberry-flavored cookies, crushed
  • 1/4 cup unsalted butter, melted

For the Cream Cheese Layer:

  • 2 cups cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream

For the Blackberry Mousse Layer:

  • 1 cup fresh blackberries
  • 1/2 cup granulated sugar
  • 1 1/2 cups heavy cream, chilled
  • 2 tsp gelatin, dissolved in 3 tbsp of warm water

For the Garnish:

  • Whole fresh blackberries
  • Whipped cream
  • Mint leaves

Directions:

Prepare the Blackberry Crust:
Mix crushed blackberry cookies with melted butter until well combined.
Press the mixture into the bottom of a springform pan and refrigerate to set for at least 30 minutes.
Prepare the Cream Cheese Layer:
In a bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
In a separate bowl, whip the heavy cream to stiff peaks and gently fold into the cream cheese mixture.
Pour this over the chilled blackberry crust and smooth the top with a spatula.
Refrigerate to set for at least 1 hour.
Prepare the Blackberry Mousse Layer:
Puree the fresh blackberries with sugar until smooth. Strain to remove seeds if desired.
Whip the chilled heavy cream to stiff peaks.
Gently heat the dissolved gelatin if not liquid, and mix into the blackberry puree.
Carefully fold the blackberry mixture into the whipped cream until no streaks remain.
Pour the blackberry mousse over the cream cheese layer and refrigerate for several hours or overnight.
Garnish:
Just before serving, garnish the cheesecake with whole fresh blackberries, dollops of whipped cream, and mint leaves for a refreshing touch.
