Exquisite Meringue Pavlova Roll

Pavlova Roll Cake

Ingredients:

  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup fresh berries (such as strawberries, raspberries, blueberries)
  • Powdered sugar, for dusting

Directions:

1. Preheat your oven to 300°F (150°C). Line a 10x15-inch baking sheet with parchment paper.
2. In a clean mixing bowl, beat the egg whites on high speed until soft peaks form.
3. Gradually add the granulated sugar, cornstarch, white vinegar, and vanilla extract to the egg whites while continuing to beat on high speed until stiff, glossy peaks form.
4. Spread the meringue mixture evenly onto the prepared baking sheet, forming a rectangle.
5. Bake in the preheated oven for 25-30 minutes or until the meringue is set and lightly golden.
6. Remove the meringue from the oven and let it cool for a few minutes.
7. Meanwhile, whip the heavy cream until stiff peaks form.
8. Carefully flip the meringue onto a clean kitchen towel dusted with powdered sugar.
9. Peel off the parchment paper and spread the whipped cream over the meringue.
10. Scatter the fresh berries evenly over the whipped cream.
11. Starting from one short end, carefully roll up the meringue with the help of the kitchen towel.
12. Transfer the rolled pavlova onto a serving platter and dust with powdered sugar.
13. Slice and serve immediately, or refrigerate until ready to serve.
