Marbled Cheesecake

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:

  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup sour cream
  • 3 tablespoons all-purpose flour
  • 1/4 cup cocoa powder
  • 2 tablespoons milk

Directions:

Preheat your oven to 325°F (165°C). Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Set aside.

In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream.

Remove 2 cups of the cream cheese mixture and blend with cocoa powder and milk until smooth.

Pour half of the vanilla cream cheese mixture over the crust. Spoon half of the chocolate mixture in dollops over the top. Repeat with remaining mixtures.

Using a knife or skewer, swirl the mixtures together to create a marbled effect. Be careful not to overmix.

Bake for 55-60 minutes, or until the center is set. Turn off the oven, open the oven door slightly, and let the cheesecake cool in the oven for 1 hour.

Chill in the refrigerator for at least 4 hours before serving.
