Eggless No-Oven Chocolate Cake

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract

For the Chocolate Ganache Frosting:

  •   1/2 cup heavy cream
  •   1 cup semi-sweet chocolate chips
  •   1 tablespoon unsalted butter

Directions:

1. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until well combined.
2. Make a well in the center of the dry ingredients and pour in milk, vegetable oil, vinegar, and vanilla extract.
3. Stir the wet and dry ingredients together until a smooth batter forms.
4. Pour the batter into a greased and lined 8-inch round cake pan.
5. To prepare without an oven:
   - Heat a large pot with a tight-fitting lid on the stove over medium heat. Place a wire rack or trivet in the bottom of the pot.
   - Once the pot is hot, carefully place the cake pan on top of the wire rack.
   - Cover the pot with the lid and cook the cake on low heat for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
6. Once the cake is cooked, remove it from the pot and let it cool completely before frosting.
7. To make the Chocolate Ganache Frosting:
   - In a small saucepan, heat the heavy cream over medium heat until it starts to simmer.
   - Remove from heat and add the chocolate chips and butter to the saucepan. Let it sit for a minute, then stir until smooth and glossy.
8. Let the ganache cool slightly, then pour it over the cooled cake and spread it evenly with a spatula.
9. Allow the ganache to set before slicing and serving.
