Lemon Zucchini Cake Recipe!
Ingredients:
For the cake:
- 2 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 and 1/2 cups granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 2 cups grated zucchini
For the glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
👩🍳 Instructions:
1️⃣ Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
2️⃣ In a mixing bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
3️⃣ In a separate mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
4️⃣ Beat in eggs, one at a time, followed by vegetable oil, buttermilk, lemon zest, lemon juice, and vanilla extract.
5️⃣ Gradually add the flour mixture to the butter mixture, mixing until just combined.
6️⃣ Stir in the grated zucchini until evenly distributed throughout the batter.
7️⃣ Pour the batter into the prepared baking pan and spread it evenly.
8️⃣ Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
9️⃣ Remove the cake from the oven and let it cool completely in the pan on a wire rack.
🔟 In a small bowl, whisk together powdered sugar and fresh lemon juice to make the glaze.
