LEMON CREAM COOKIES π
INGREDIENTS
For the cookies
- 200 grams of wheat flour
- 1 unit of egg yolk
- 80 grams of icing sugar
- 1 teaspoon of lemon zest
- 1 pinch of baking powder
- 50 grams of unsalted butter
For the lemon cream
- 100 grams of icing sugar
- 2 of Lemons
- 50 grams of unsalted butter
PREPARATION
In a bowl, mix the softened butter with the icing sugar, until a homogeneous mixture is obtained.Add lemon zest and egg yolk, keep mixing.
Finally, add the flour and baking powder, mix very well until you get a uniform dough. Make a ball and take the cookie dough to the fridge for 10 minutes.
After this time, on a floured surface, stretch the dough to a thickness of one centimeter. Then, with the help of a round cutter, shape the cookies.
On a silicone mat, place the cookies and bake them at 170°C for 20 minutes. When they are ready let them cool.
For the lemon filling, in a bowl, beat the softened butter with the icing sugar and the lemon juice, until a smooth and homogeneous texture is obtained.
Finally, introduce the previous filling into a pastry bag, put a little cream on one of the cookies and place another on top, as if they were alfajores. Repeat this process with all of them.
