In a mixing bowl, beat the eggs and granulated sugar together until light and fluffy, which should take about 2-3 minutes.

Add the vanilla extract, buttermilk, and vegetable oil to the egg-sugar mixture. Mix until well combined.

In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, and a pinch of salt.

In a mixing bowl, combine the softened cream cheese, softened unsalted butter, and powdered sugar. Beat until smooth and creamy.
Add the vanilla extract and mix until fully incorporated.

Assembly:

Carefully unroll the cooled pink velvet cake from the towel.

Spread the prepared cream cheese filling evenly over the cake, leaving a small border around the edges.

Gently re-roll the cake, this time without the towel, starting from the same shorter end.
Place the seam side down.

Wrap the Swiss roll in plastic wrap and refrigerate for at least 1-2 hours to set.

Garnish:
