Christmas Snowballs

Ingredients

  • 1 cup flour ( all purpose or cake )
  • 1/3 cup icing sugar
  • 1/2 cup unsalted butter (room temp)
  • 1/2 cup almond or walnuts
  • 1 tsp vanilla essence
  • 1/4 tsp salt
  • *more icing sugar for coating

Instructions

1. Grind the nuts until fine in texture and keep aside .

2. In a large bowl add butter, vanilla and icing sugar. Mix until light and fluffy. Sift in flour and salt . Then add the nuts .Mix until a dough is formed .

*If the dough is a little crumbly add a little bit of milk .

3. Use a spoon or ice cream scoop to scoop out the dough. Form it into smooth balls .Line the baking tray with parchment paper. Place the dough balls.

4. Bake in a preheated oven at 180 Degrees Celsius for 15-18 minutes.

5. Let the cookies cool for 5 minutes then coat them with icing sugar. Coat them twice so that they can be evenly covered .

Note :

 No baking powder or bicarbonate of soda added.
