CARIBBEAN RUM CAKE

INGREDIENTS

For the cake:

  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup (225g) unsalted butter, softened
  • 1 1/2 cups (300g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) whole milk
  • 1/2 cup (120ml) dark rum

For the rum syrup:

  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60ml) water
  • 1/4 cup (60ml) dark rum

For garnish:

  • Powdered sugar (optional)
  • Additional rum for brushing (optional)

INSTRUCTIONS

1. Preheat your oven to 350°F (175°C). Grease and flour a bundt pan or cake pan.

2. In a medium-sized bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

5. Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Begin and end with the dry ingredients, mixing well after each addition.

6. Stir in the dark rum until well combined.

7. Pour the batter into the prepared pan and smooth the top with a spatula.

8. Bake for approximately 50-60 minutes, or until a toothpick inserted into the center comes out clean.

9. While the cake is baking, prepare the rum syrup. In a small saucepan, combine the granulated sugar and water. Bring to a boil over medium heat, stirring until the sugar has dissolved. Remove from heat and carefully stir in the dark rum.

10. Once the cake is finished baking, remove it from the oven and let it cool in the pan for about 10 minutes.

11. Use a skewer or toothpick to poke several holes all over the cake. Slowly pour the rum syrup over the warm cake, allowing it to soak in. Let the cake cool completely in the pan before removing.

12. Optional: Once the cake has cooled, you can brush additional rum over the top of the cake for extra flavor.

13. Before serving, you can dust the cake with powdered sugar for a decorative touch.
