Reese's Peanut Butter Cup Cheesecake

 🔸Ingredients🔸

 For the base:

  •  - 1 1/2 cups chocolate chip cookie crumbs
  •  - 1/4 cup of sugar
  •  - 1/2 cup melted butter

 For the cheesecake filling:

  •  - 3 packages (8 oz each) cream cheese, at room temperature
  •  - 1 cup of sugar
  •  - 1 cup of peanut butter (Peanut Butter)
  •  - 1 teaspoon vanilla extract
  •  - 3 eggs

 For coverage:

  •  - 1 cup semisweet chocolate, chopped
  •  - 1/2 cup heavy cream
  •  - Mini Reese's Peanut Butter Cups to decorate

 🔸Instructions🔸

 1. Preheat the oven to 325°F (160°C).  Grease a 9-inch (23 cm) springform cake pan.

 2. In a bowl, mix the cookie crumbs, sugar and melted butter.  Press this mixture into the bottom of the mold to form the base.  Refrigerate while you prepare the filling.

 3. In another large bowl, beat cream cheese and sugar until smooth and creamy.

 4. Add the peanut butter and vanilla to the cream cheese mixture and beat until well combined.

 5. Add the eggs one at a time, beating well after each addition.

 6. Pour the cream cheese mixture over the cookie base in the mold.

 7. Bake in the preheated oven for approximately 45-50 minutes, or until the center is almost set.  Let cool to room temperature and then refrigerate for at least 4 hours or overnight.

 8. For the topping, heat the heavy cream in a saucepan until it is about to boil.  Then, pour over the chopped chocolate in a bowl.  Let sit for a few minutes and then stir until the chocolate is melted and the mixture is smooth.

 9. Pour the chocolate coating over the cooled cheesecake and spread it evenly.

 10. Decorate with Mini Reese's Peanut Butter Cups or any other decorations you want.

 11. Refrigerate again for at least 1 hour before serving.  Enjoy your delicious Reese's Peanut Butter Cup cheesecake!
