HALOWEEN PUMPKIN PIE TRUFFLES π
A fun Halloween treat for all the family to enjoy! These little treats can also be covered in dark chocolate, left plain or decorate to match the occasion. They make a pretty addition to a party plate or as a sweet treat after a nice meal with family or friends π§‘
RECIPE:

Ingredients π
- 120g/4.2oz Philadelphia Cream Cheese
- 1/2 Cup Pumpkin Puree
- 1 1/2 Tbls Icing Sugar
- 200g/7oz Digestive Biscuits, finely crushed crumbs
- 1 Tsp Ground Cinnamon
- 1/4 Tsp Ground Ginger
- 1/4 Tsp Allspice
- 1/4 Tsp Ground Nutmeg
- 120g/4.2oz White Chocolate
- 225g/8oz White Chocolate for dipping
- Orange Food Colouring (see note)
- 25ml Vegetable Oil
- Green Smarties, halved
- Pretzels
- Mini Dark chocolate chips for mummy eyes
- Dark Chocolate, melted for pumpkin face features
Method:
Beat together the cream cheese, icing sugar and pumpkin puree until smooth. Stir in the finely crushed biscuits and spices. Add the melted chocolate and stir until smooth. Cover and chill in the fridge for 1-2 hours or until cold and firm.
After the dough is chilled, roll the truffle mixture into small balls and place on a baking sheet. Chill in the fridge again for at least 30 minutes.
Melt the white chocolate in the microwave stopping and stirring in between so it won't burn. When nearly all melted stir it with a hand balloon whisk to make it smooth then add the vegetable oil and continue stirring until well combined. Add food colouring and mix again until you reach the color desired. Dip truffles into chocolate and place onto a clean baking sheet and decorate accordingly to different balls. Keep refrigerated.
Decoration:
Mummy Truffles - Dip balls in melted white chocolate and chill in the fridge until chocolate has hardened before drizzling with white chocolate on top. Chill in the fridge again before placing the eyes.
Haloween Truffles - After the balls have chilled in the fridge for 30 minutes, insert a small piece of pretzel into the top of the ball. Place it on the tip of a knife and spoon the melted chocolate on top to cover the ball completely. Leave the chocolate to slightly set, then insert the halved smartie and place back in the fridge.
NOTE:
It is important to use an oil base food colouring otherwise the chocolate will harden.
