Lamingtons
Ingredients
- 500ml Flour
- 10ml Baking powder
- Pinch of Salt
- 2 Eggs
- 185ml Sugar
- 125ml Melted butter / Oil
- 5ml Vanilla essence
- 180ml Milk
Sauce
- 500ml Icing sugar
- Drops of pink food colouring
- 8g gelatine
- 250ml Boiling water
Method
Preheat the oven to 180C
Lightly butter an 10 inch square cake tin.
In a large bowl, sift together the flour, baking powder and salt. Set aside.
In a separate bowl, use an electric beater to cream the sugar and eggs ( one at a time) mixture together until pale and fluffy.
Add the essence, oil to the mixture and beat well.
Next, use a spatula to alternately add the flour mixture and milk, in three additions, starting and finishing with the flour.
Spread the batter into the cake tin, making sure it's evenly spread.
Bake in the oven for about 30 minutes. Test the center of the cake with a toothpick and make sure it comes out clean.
Once the cake has cooled cut it into squares of a desired size
For the sauce
Sift icing sugar add food colouring, gelatine into a bowl add boiling water. Stir until smooth and leave for an hour.
Place coconut in a dish. Using a brush, brush 1 piece of cake at a time (all sides) in syrup and toss in coconut. Serve.
