INGREDIENTS

  • 1/2 cup refined sugar (for fluffing).
  • 1/2 cup of dulce de leche.
  • 1/4 cup of water.
  • 3 tablespoons unflavored gelatin powder.
  • 3 tablespoons of maple syrup.
  • 5 eggs.
  • 40 grams of cocoa powder.
  • 80 grams of wheat flour.
  • 140 grams of refined sugar.
  • 250 grams of pitted plums.
  • 300 grams of sweet whipped cream.
  • Grated sweet chocolate.

How to prepare the chocolate roll

The first thing we will have to do is separate the yolks from the egg whites.  Next, in a pot in a bain-marie, we mix the egg yolks with a little sugar.  The indicated point to know that this step is ready is when the yolks look a little pale, at which time the container should be removed from the heat.

Next, beat the egg whites with the remaining amount of sugar, beat until they reach stiff peaks.  We preheat the oven to a temperature of 170° C. (325°F)

We will integrate the mixtures of yolks and egg whites with quite slow enveloping movements, so that the fluffy volume of the whites is maintained.  We will continue, mixing the cocoa powder with the wheat flour.  When these ingredients are well mixed, we will add them, slowly and using enveloping movements, to the mixture prepared previously.

We line an appropriate tray with baking paper.  We put the previous mixture on the tray, and then with a kitchen spatula or a wooden spoon, we spread it over the surface of the tray.  We put it in the oven and let it cook for 12 to 15 minutes, at a temperature of 170° C. (325°F).

In a separate pot, place the water, all of the plums, the sugar and the unflavored gelatin.  Let cook for a few minutes (until the plums have softened well).  Using a mixer, we must beat the milk and gelatin well.  When the mixture has cooled, we will add the whipped dulce de leche.

Sprinkle a little powdered sugar on baking paper to place the cake that we have just made in the oven on it.  We pour the plum cream that we just made on top of the cake and spread it over the entire surface.  We roll the cake, thus creating the chocolate roll, we can finish it with a chocolate coating, which will not only be beautiful, but will make it even richer.
